As you can see by these pictures, I don’t know how to cook small portions of things. Needless to say, I ended up with plenty of leftovers from our NYE dinner.
I open the fridge and I came up with a really simple recipe that tastes AMAZING!!!!
What you will need:
- Leftover cooked rice – about 2 cups
- Leftover cooked lentils – about 2 cups
- Leftover ham or turkey or chicken
- 01 medium onion
- ½ cup of almonds
How to prepare:
Sautee the onions with some Extra virgin olive oil and salt (to taste). When the onions are fully cooked add the rice, lentils and ham. Just let heat it up.
In a separate pan, toast the almonds.
When all is heated and toasted, serve the mixture on a beautiful pan and cover with the almonds. 
I have been doing this kind of “fast food” a lot around here. Even if I don’t have all the leftovers, I cook rice and the lentils and I add poached chicken breast ; )
